At Jatayu, the dining experience is built from the ground up. From the spices ground each morning to the clay oven at the heart of the kitchen, every decision has been made with one thing in mind: to serve Indian food the way it was meant to be served.
Every chef in the Jatayu kitchen is Indian, trained in India, with a minimum of fifteen years of experience behind them. This is not a detail. It is the foundation of everything on the plate.
The spices are sourced directly from India and ground fresh each day in the kitchen. The flavour that results cannot be bought in a jar, replicated with a shortcut, or found anywhere else on this island.
No two dishes share a sauce. Every recipe is made from scratch, cooked to order, exactly as it should be.


At the heart of the kitchen sits a traditional clay tandoor oven, imported from India and operated by a tandoor specialist. Few restaurants outside the subcontinent have one. Fewer still use it with this level of precision.
